Leftover chicken never tasted so good! Sometimes you need lunch for one and sometimes you need lunch for a few friends. That's why two ingredient lists are given here. The first list is for one serving. The next is for a whole chicken, chopped up, about 5 servings.
1 cups chopped cooked chicken
___ cups Granny Smith apple, diced
___ lemon juice
___ Tbsp mayonnaise
___ stalks celery, diced
___ red onion, minced
___ eggs, hard boiled and chopped
___ garlic, minced
salt and pepper to taste
5 cups chopped cooked chicken
___ Granny Smith apples, diced
juice of one large or two small lemons
___ cup mayonnaise
___ stalks celery, diced
___ red onion, minced
___ garlic, minced
___ eggs, hard-boiled and chopped
salt and pepper to taste
1. Combine ingredients from first or second list. Serve with gluten-free crackers.
Note: A five-pound chicken, when roasted and deboned, makes about 5 cups of chopped up chicken. You won't need any salt or pepper if spiced chicken such as Roast Lemon Pepper Chicken is used for this recipe.
