Bean Soup for a Cold Windy Day |

printable versionI always liked ham and bean soup, but never exactly figured out how to make it to my liking. Today I succeeded! Those of us with delicate palates don't care for the heavy spices usually associated with bean soups. My other problem is I am one of 3 to 5% of people who get terribly arthritic with eating nightshades, a family of plants that includes potatoes, tomatoes, bell peppers, chili peppers, paprika, eggplant and tobacco. I think of it as the nightshade family producing a poison which we cannot detoxify. All these restrictions are a tall order for bean soup.
I started with a package called 15 bean soup, 1 pound 4 oz of 15 different kinds of beans. The spice packet, of course, went into the trash. This is a fussy recipe, good for a day when you're hanging around the house most of the day anyway. My "boys" is not particularly fond of soups.
